Often times many think "Its just water" "We can clean it up ourselves" not realizing the effects of water damage.  After 72 hours of a water loss if the drying process has not began there's a chance of microbial growth which can then lead to mold.  As time progresses so does the category of the water.  Which can be much more expensive and tedious of a job to get done.  Water also can absorb into flooring, paint, belongings, and walls which may cause total losses and will need to be completely demolished and removed.  Some may belongings may be able to be salvaged but not all.
